I appreciate Tabasco. Interesting company and marketing (who can forget the exploding mosquito?) Solid products. But I have to be real today.I experimented with their BBQ Sauce today. It called for creating an oil-based mopping sauce then finish with the remaining sauce. It was average, kind of greasy. Kind of onion-like. The pork looked beautiful. Fell right apart. But not my flavor profile. Not to worry. Average pulled pork, when barbecued by an above-average barbecuer is still better than average. And what beats barbecuing in the winter? For the holidays, I am going to tilt towards sirloin and rib roasts.
